This soup is great for when you’re at home alone with an empty fridge but want something a bit more nutritious than a bread roll filled with half a slice of cheese.
We’ve always got a packet or two of frozen peas in the freezer, so I make this a lot when I just can’t be bothered to cook for myself. This recipe yields a full cereal bowl of soup so no need to do any math to reduce the amounts of ingredients or times. You’re welcome!

1 small onion (35-40g) 15 g oil 225 g peas (frozen) 250 g water 1 tsp vegetable stock powder (or equivalent amount to make 1 cup of stock) ¼ tsp salt
1Chop one small quartered onion in jug for 3 secs / speed 5.
2Add 15g oil and saute for 2:30 min/ 120 degrees / speed 1.
3Add 225g peas, 250g water, 1 tsp of veg stock powder (or equivalent to 1 cup of veg stock) and cook for 8 minutes / 100 degrees / speed 1.
4Puree for 1:30 min / starting at speed 5 and gradually increasing to speed 8. Season to taste and serve with or without some bread.
