Easy-peasy Hummus

We used to buy hummus pretty much every week until I discovered how easy it was to make. Dana Schutz of The Minimalist Baker blog showed me how easy (and tasty) cooking vegan food can be and inspired us to eat more plant-based foods. We aren’t daily meat-eaters, but I never realised how much animal-based products we ate until we tried to go vegan Monday to Friday last year. This resolution didn’t stick for too long (I love cheese too much!), but we do strive to eat more plant-based foods because of just how much better we feel when we eat more veg.

After making it dozens of time with varying amounts of ingredients, this is my favourite version of Dana’s 6 minute hummus!

This is such an easy hummus recipe that will take around 6 minutes! Less, if you decide you want to skip heating up the chickpeas and garlic.

 1 can of chickpeas (425g) with its liquid
 50 g tahini
 25 g olive oil (or 2 Tsbp)
 1 clove of garlic
 1 tbsp lemon juice (optional)
 ¾ tsp salt
 ¼ tsp cumin

Add 1 x 425g can of chickpeas with its liquid + 1 clove of garlic to jug. Mix 5 minutes/ 90ºC / speed 1.

Add 50g tahini + 25g olive oil + 3/4 tsp salt + 1/4 tsp cumin to jug (+ optional lemon juice). Mix 30 sec / speed 6.

Place on serving plate and allow to cool before adding topping of choice (e.g. olive oil, sprinkle of paprika etc.) OR place in fridge to cool and thicken before serving with toppings.
