Banana Bread

Let’s have a quick chat about banana bread. It’s an Aussie cafe staple and one of my ultimate comfort foods when I’m craving a sweet taste of home. There are many lovely recipes for this but I needed one that was not only moist, fluffy and not-too-sweet but also no-fuss.

This recipe was inspired by Donna Hay and MrsDplus3 but adjusted a bit for my germanised palate (= less sugar).

The easiest and fluffiest one-jug banana bread you'll ever make.

Ingredients
 3 medium bananas (250g or 9oz)
 125 g Rapadura sugar
 125 g butter
 255 g spelt or normal flour
 2 eggs
 1 tsp baking powder
 1 tsp bicarbonate of soda
 1 tsp vanilla extract
 1 tsp cinnamon

Preheat oven to 160℃ (fan forced) or 180℃ (top and bottom)

Purée bananas 15 secs TM6 OR 15 secs / speed 5 TM5 or TM31. Scrape down bowl.

Add 125g sugar, 125g softened butter and 2 eggs (or egg sub) to jug. Mix for 2 mins / speed 5. Scrape down bowl.

Add 255g flour*, 5g vanilla extract, 1 tsp baking powder, 1 tsp bicarbonate of soda, 1 tsp cinnamon. Mix 15 sec / REVERSE / speed 4.

*if using 255g self-raising flour, do NOT add baking powder and bicarb.

Pour into a loaf tin* and bake for 1 hour or until a wooden skewer inserted in the middle of the loaf comes out clean.

*You can decorate it by slicing a banana in half lengthwise and placing it in the batter.
